Start with the daily rack rhythm
Undercounter machines work well when washing is intermittent and the operator can load smaller batches close to the service area. Hood type machines make more sense when racks move continuously from scraping to washing to drying.
Check clearance and item mix
Tall trays, larger plates and mixed cookware quickly push a kitchen toward hood type equipment. If the load is mostly glasses, cups and plates, compact machines can keep the footprint tight without slowing service.
Plan the table workflow early
For hood type and conveyor layouts, inlet and outlet tables should be designed with the machine. A good table path reduces lifting, keeps dirty and clean areas separated, and makes peak service calmer.
Choose the machine around rack movement first, then confirm capacity, clearance and utilities.
